I learned something new about key limes. They are much smaller than your standard lime. Who knew? I guess since I’ve never baked with them, I was clueless.
This week I made key lime cupcakes, based on popular demand. 🙂
I found Sprinkles’ Key Lime Cupcake recipe here, and had to try it out.
The trickiest part was zesting 8 key limes without getting hand cramps or grating my knuckles. Easier said than done.
With lots of key lime zest incorporated into the batter and frosting, these little guys pack a punch.
They did not disappoint . . . tangy, sweet, melt-in-your-mouth good . . . everything a cupcake should be. Check out the recipe here!
